The name YOKARO is derived from the trade name once used by my great-grandfather. We carry on the family pride and tradition, embarking on new challenges in a new place. I chose the path of cooking because I strongly wished to become a chef who moves people's hearts. With that thought in mind, I also embarked on the journey of becoming a chef. We have taken root here as pioneers of the still rare 'soup curry' in Hanoi. The most crucial thing for soup curry is the 'soup'. Therefore, we dedicate ourselves passionately to making the soup. We carefully extract broth from chicken and pork bones and several kinds of vegetables over ten hours. Every drop is infused with our time and passion. Essential too are the spices. Our soup curry blends 17 types of spices in perfect balance to bring out depth and aroma. And there is one more thing we cherish, and that is 'being loved in this place'. That's why we use only ingredients that can be sourced in Vietnam. We are grateful for the local blessings and strive for a taste that resonates with the people of Hanoi. Our signature Sichuan Mapo Tofu is crafted with Pixian doubanjiang (aged chili bean paste) procured through our exclusive channels from Sichuan, China, and top-grade Sichuan peppercorns. Like the main branch, we offer recommended Chinese dishes, but only at the No. 2 location we serve yakitori made from freshly processed free-range chicken that morning. Our house-made yakitori tare, continuously replenished since opening, has a deep flavor unmatched by other restaurants. Houtou is a well-known local dish of Yamanashi, made by kneading wheat flour with water and cutting it into flat "Houtou ramen" noodles, which are simmered in a miso soup with plenty of other ingredients. Yamanashi is located in a mountainous region that is not suitable for rice cultivation, so, Houtou has been popular as a staple food in place of rice for a long time. Therefore, making Houtou was considered to be training to get married.   Also, it is during the camp handed down by Takeda Shingen, who ruled this land during the Sengoku period, from high priests (envoys to Tang Dynasty) who visited Koshu and is commonly referred to as "Takeda soup", which is a miso soup made with raw noodles and seasonal vegetables. It is said that it was used as camp food because it was boiled in a bowl, easy to digest, and highly nutritious. In addition, one theory that the name "Houtou" was derived from Lord Takeda Shingen had cut noodles into long strips with a treasured sword passed down.   Our restaurant explores the possibilities of the historic Houtou flavor and modern menus, and we offer you what we think is delicious with a pure heart.
