Since it’s Vietnam, shrimp seemed right, so we headed to a nearby place that looked good for beer. We ordered: 2 shrimp, 1 chicken tender, 2 kinds of fish, vegetable tempura (eggplant, sweet potato, and okra), plus miso soup and pickles. 198K (before tax). The beers were Tiger and maybe Sapporo (?). As expected, tempura fried by a Japanese cook is the real deal. I’ve thought Vietnam, with its abundance of shrimp, fish, and vegetables, is perfect for tempura, and this place seems to have made that a reality. It was very delicious. I mentioned how fascinating Vietnam is—the markets even have fish like sillago (キス) and goby (ハゼ) that don’t enter regular distribution in Japan and are known only to anglers. If you want authentic tempura, this is the place.
